Creamy German Potato Salad Recipe
Ingredients
- 4-1/2 pounds red potatoes (about 18 medium)
- 1/2 pound bacon strips, diced
- 1 medium onion, chopped
- 4 teaspoons all-purpose flour
- 3/4 cup sugar
- 3/4 cup cider vinegar
- 1 cup heavy whipping cream
Directions
- Cut potatoes into 1/2-in. cubes; place in a stock pot and cover with water. Bring to a boil. Reduce heat; cover and simmer for 10-12 minutes or until tender.
- In a Dutch oven, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 5 tablespoons drippings. Set bacon aside.
- In the same pan, saute onion in drippings until tender. Stir in flour until blended. Gradually stir in sugar and vinegar. Bring to a boil; cook and stir for 2 minutes until thickened.
- Remove from the heat; gradually whisk in cream. Set aside. Drain potatoes. Transfer to a large bow; add reserved onion mixture and bacon. Stir gently to coat. Serve warm. Yield: 13 servings (3/4 cup each).

- 2 cups (16 ounces) sour cream
- 2 cups mayonnaise
- 2 pound sliced bacon, cooked and crumbled
- 6 plum tomatoes, chopped
- 3 green onions, chopped
- Crumbled cooked bacon or thinly sliced green onions, optional
- Assorted crackers or chips
Directions
- In a large bowl, combine the sour cream, mayonnaise, bacon, tomatoes and onions. Refrigerate until serving. Garnish with bacon and green onions if desired. Serve with crackers or chips. Yield: 6 cups.

Mini Burgers with the Works Recipe
I started preparing these mini burgers several years ago as a way to use up bread crusts accumulating in my freezer. They're delicious.
Recipe: Quick , BBQ Burgers
Prep/Total Time: 30 min.
Yield: 12 Servings
Ingredients
- 1/4 pound ground beef
- 3 slices process American cheese
- 4 slices white bread (heels of loaf recommended)
- 2 tablespoons prepared Thousand Island salad dressing
- 2 pearl onions, thinly sliced
- 4 baby dill pickles, thinly sliced
- 3 cherry tomatoes, thinly sliced
Directions
- Shape beef into twelve 1-in. patties. Place on a microwave-safe plate lined with paper towels. Cover with another paper towel; microwave on high for 1 minute until a meat thermometer reads 160° and juices run clear. Cut each slice of cheese into fourths; set aside.
- Using a 1-in. round cookie cutter, cut out six circles from each slice of bread. Spread half of the bread circles with dressing. Layer with burgers, cheese, onions, pickles and tomatoes. Top with remaining bread circles; secure with toothpicks. Yield: 1 dozen.

Ingredients
- 1 medium ripe avocado, peeled and cubed
- 1 medium tomato, finely chopped
- 1 small onion, finely chopped
- 1 can (4 ounces) diced jalapeno peppers, drained, divided
- 1 tablespoon lime juice
- 1 garlic clove, minced
- 2 pounds ground beef
- 4 ounces reduced-fat cream cheese
- 1 cup (4 ounces) shredded Monterey Jack cheese
- 1 tablespoon steak seasoning
- 4 kaiser rolls, split
- 4 Bibb lettuce leaves
Directions
- In a small bowl, combine the avocado, tomato, onion, 1/4 cup jalapenos, lime juice and garlic; set aside.
- Shape beef into eight patties. In another bowl, combine the cheeses and remaining jalapenos. Spoon onto the center of four patties. Top with remaining patties and press edges firmly to seal; sprinkle burgers with steak seasoning.
- Grill burgers, covered, over medium heat for 6-7 minutes on each side or until a meat thermometer reads 160°. Serve on rolls with lettuce leaves and avocado mixture. Yield: 4 servings.

Ingredients
- 1/2 cup lime juice
- 2 tablespoons honey
- 4 teaspoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 4 boneless skinless chicken breast halves (4 ounces each)
- 6 cups spring mix salad greens
- 2 cups cubed seedless watermelon
- 1 cup fresh blueberries
- 1 medium sweet yellow pepper, cut into 1-inch pieces
- 1/3 cup chopped walnuts, toasted
Directions
- In a small bowl, combine the lime juice, honey, oil, salt and pepper. Pour 1/3 cup into a large resealable plastic bag; add chicken. Seal bag and turn to coat; refrigerate for at least 1 hour. Cover and refrigerate remaining lime juice mixture for dressing.
- Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill chicken, covered, over medium heat or broil 4 in. from the heat for 4-7 minutes on each side or until a meat thermometer reads 170°.
- In a large bowl, combine the salad greens, watermelon, blueberries and yellow pepper; add reserved dressing and toss to coat. Divide among four serving plates. Slice chicken; serve with salads. Sprinkle each serving with 4 teaspoons walnuts. Yield: 4 servings.

Sweet and Sassy Turkey Burgers Recipe

Ingredients
- 6 turkey bacon strips, diced and cooked
- 1/4 cup dried cranberries
- 1 tablespoon maple syrup
- 1 teaspoon rubbed sage
- 1/8 teaspoon pepper
- 1-1/4 pounds extra-lean ground turkey
- 1 Italian turkey sausage link (4 ounces), casing removed
- 3 slices part-skim mozzarella cheese, cut in half
- 6 onion rolls, split
- 6 tablespoons jellied cranberry sauce
- 6 tablespoons fat-free mayonnaise

- In a large bowl, combine the first five ingredients. Crumble turkey and sausage over mixture and mix well. Shape into six burgers.
- Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill burgers, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a meat thermometer reads 165° and juices run clear. Top with cheese; cook 1-2 minutes longer or until cheese is melted.
- Toast the rolls; spread warm rolls with cranberry sauce and mayonnaise. Serve burgers on rolls with lettuce. Yield: 6 servings.

Ingredients
- 6 flour tortillas (8 inches)
- 3 tablespoons sugar
- 1-1/2 teaspoons ground cinnamon
- 4 cups finely chopped tart apples (about 2 medium)
- 1 cup finely chopped ripe pear
- 1/2 cup quartered seedless red grapes
- 1/2 cup chopped celery
- 1/4 cup chopped walnuts
- 3 tablespoons orange juice
- 1 tablespoon brown sugar
- 2 teaspoons grated orange peel
Directions
- Coat both sides of each tortilla with cooking spray. Combine the sugar and cinnamon; sprinkle over broth sides of tortillas.
- Cut each into eight wedges. Place on baking sheets. Bake at 400° for 4-5 minutes or until crisp.

- 1/2 cup lemon-lime soda, chilled
- 1/2 cup tequila
- 1/3 cup frozen limeade concentrate, partially thawed

Directions
- Using lime slices, moisten the rims of four margarita or cocktail glasses. Set aside lime slices for garnish. Sprinkle coarse sugar on a plate; hold each glass upside down and dip rim into sugar. Set aside. Discard remaining sugar on plate.

Ingredients
- 1 medium sweet yellow pepper, chopped
- 1 cup finely chopped onion
- 2 garlic cloves, minced
- 1 teaspoon canola oil
- 2 medium tomatoes, chopped
- 1 cup frozen corn, thawed
- 1 can (15 ounces) black beans, rinsed and drained
- 1/4 teaspoon pepper
- 1/8 teaspoon salt
- 10 flour tortillas (6 inches)
- 1 cup (4 ounces) shredded reduced-fat cheddar cheese
Directions
- In a large nonstick skillet coated with cooking spray, saute the yellow pepper, onion and garlic in oil for 2 minutes. Stir in the tomatoes and corn; cook 2 minutes longer. Add the black beans, pepper and salt. Cook until vegetables are tender; drain.
- Spritz one side of each tortilla with cooking spray; place plain side up on baking sheets coated with cooking spray. Spoon bean mixture onto half of each tortilla; sprinkle with cheese. Fold tortilla over filling.
- Bake at 400° for 6 minutes. Carefully turn over; bake 4-7 minutes longer or until cheese is melted. Yield: 5 servings.

Super Italian Chopped Salad Recipe
Great Summer Salad
Antipasto ingredients are sliced and diced to make this substantial salad. I like to buy sliced meat from the deli and chop it all up so you can get a bit of everything in each bite.
This recipe is: Quick, Simple, Refreshing.
Ingredients
- 3 cups torn romaine
- 1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
- 1 jar (6-1/2 ounces) marinated artichoke hearts, drained and chopped
- 1 medium green pepper, chopped
- 2 medium tomatoes, chopped
- 1 can (2-1/4 ounces) sliced ripe olives, drained
- 5 slices deli ham, chopped
- 5 thin slices hard salami, chopped
- 5 slices pepperoni, chopped
- 3 slices provolone cheese, chopped
- 2 green onions, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 2 tablespoons grated Parmesan cheese
- Pepperoncini, optional
Directions
- In a large bowl, combine the first 11 ingredients. For dressing, in a small bowl, whisk the oil, vinegar, salt and pepper. Pour over salad; toss to coat. Sprinkle with cheese. Top with if desired. Yield: 10 servings.
