Jalapeno Popper Mega Burgers


If you like a little spice in your food, these big stuffed burgers are for you. Just have plenty of frosty cold drinks on hand to serve with them.—


  • Prep: 25 min. Grill: 15 min.    Yield: 4 Servings

    Ingredients

    • 1 medium ripe avocado, peeled and cubed
    • 1 medium tomato, finely chopped
    • 1 small onion, finely chopped
    • 1 can (4 ounces) diced jalapeno peppers, drained, divided
    • 1 tablespoon lime juice
    • 1 garlic clove, minced
    • 2 pounds ground beef
    • 4 ounces reduced-fat cream cheese
    • 1 cup (4 ounces) shredded Monterey Jack cheese
    • 1 tablespoon steak seasoning
    • 4 kaiser rolls, split
    • 4 Bibb lettuce leaves

    Directions

    • In a small bowl, combine the avocado, tomato, onion, 1/4 cup jalapenos, lime juice and garlic; set aside.
    • Shape beef into eight patties. In another bowl, combine the cheeses and remaining jalapenos. Spoon onto the center of four patties. Top with remaining patties and press edges firmly to seal; sprinkle burgers with steak seasoning.
    • Grill burgers, covered, over medium heat for 6-7 minutes on each side or until a meat thermometer reads 160°. Serve on rolls with lettuce leaves and avocado mixture. Yield: 4 servings.
    Nutritional Facts 1 burger equals 846 calories, 50 g fat (21 g saturated fat), 185 mg cholesterol, 1,292 mg sodium, 40 g carbohydrate, 5 g fiber, 57 g protein.

    Enjoy this recipe with a medium-bodied red wine such as Chianti, Sangiovese, Malbec or Zinfandel.

    Flash Burgers



    In a Flash Burgers


    What You Need:

    2 lb ground chuck

    Wax paper

    Freezer paper

    Butter or margarine

    How to Make It:

    Shape the ground chuck into four inch patties.

    Place the wax paper on a flat surface.

    Place a patty on the wax paper.

    Add a piece of wax paper to the top of the patty.

    Add another patty.

    Continue until all the patties are stacked alternating back and forth between the patties and wax paper and being sure to end with the wax paper.

    Wrap in the freezer paper and secure tightly.

    Freeze for up to 2 months.

    When ready to use place the butter in a skillet.

    Heat on medium heat until butter is melted.

    Add the patties.

    Cook 7 minutes.

    Flip and cook an addition 7 minutes or until as well as you like.
